Mangia Monday

Last week was a slow week in my kitchen.  Do you ever have those?  Days when you just don't feel like cooking?  I like to cook and bake but sometimes I just get so weary of planning what we're going to have for dinner, remembering to take meat out of the freezer, checking to make sure I have all the ingredients that I need.  Those nights we usually have eggs or sandwiches or "Merle Night", where we each fend for ourselves.  Last week was one of those weeks...

I tried a new casserole which was delicious.  I will make this one again... it's a quick and easy recipe with ingredients that you probably have right in your pantry.  The recipe is here.


I made another apple pie in my cast iron skillet... 
honestly, this is sooooo divine, you must try it!


Yesterday, we had homemade soup... another new recipe that we will definitely have again.

Savory Bean and Spinach Soup
Ingredients
3 14 oz cans vegetable broth
1 15 oz can tomato puree
1 15 oz can small white beans or Great Northern beans, drained and rinsed
1/2 c uncooked brown rice
1/2 c finely chopped onion
1 teas dried basil
1/4 teas salt
1/4 teas black pepper
2 garlic cloves, chopped
8 cups coarsely chopped spinach or kale leaves
finely shredded parmesan cheese
In 4 qt. slow cooker combine everything EXCEPT spinach and cheese
Cover, cook on low for 5-7 hours or high for 2 1/2-3 1/2 hours
Just before serving stir in spinach or kale and sprinkle with cheese


These quick and easy rolls are so yummy.  My friend, Joanne made them from a recipe in the Sunday paper for our book club gathering on Thursday and they were so good I had to try them.  
I couldn't find the recipe in my paper... it was probably used to start a fire in the woodstove.  
So, this is how I made them...
Mix together:
1 stick (1/2 cup) melted butter
1 clove minced garlic
generous 1/4 cup parmesan cheese
Quarter the biscuits in one can of large refrigerated biscuits
Roll the biscuit pieces in the butter mixture and place on a cookie sheet covered with parchment paper and put in a preheated 325 degree oven.  Bake for 10-12 minutes.
The bottoms get very brown (because of the butter) so watch carefully that they don't burn.
Enjoy.. but beware, they are just a tad addicting...


Aldi's had a pouch of pumpkin cookie mix on sale and I thought, "What the heck?" so I bought one pouch and gave them a try... pretty darn good for a mix!


I mixed a few chocolate chips into the last dozen... yum!
I think I will grab another pouch or two...


And that's it for last week... and later this week I'll be visiting in Sparkle City.  There is usually some pretty awesome food there, so, I'm guessing I'll have some pretty good food pictures next week... it just won't be food that I made!  And isn't food always better when someone else makes it?
